Vegetarian Chili

This is the Abbiate's favorite chili of all time. It is hearty, healthy, and delicious vegetarian chili packed with good-for-you ingredients like vegetables, beans, and the perfect seasoning mix. Make this chili once and repurpose it for healthy meals all week long for those busy weeks.
Ingredients

1 tbsp olive oil

½ medium onion, chopped

2 bay leaves

1 tsp gr. cumin

1 tbsp dried oregano
-
1 tbsp salt

2 stalks celery, chopped
-
2 bell peppers, chopped
-
3 cloves garlic, chopped
-
2 (4 oz) cans green chile peppers, drained

1 can whole tomatoes, chopped

½ cup chili powder

1 tbsp black pepper
-
½ cup - 1 cup broth
-
1 can each:
-
Pinto, kidney, black, and white beans
-
Corn
-
Tomato sauce
Preparation

Heat oil. Saute onion and garlic.

Add bell pepper, celery, and bay leaves, cumin, oregano, salt, pepper, green peppers, tomatoes and tomato sauce.

Add beans, then chili powder to taste. Add broth as needed. Thicken with cornstarch if needed.

Simmer on low heat for 30 min. Add corn for last 5 min.
